Rose Recipe ArchiveArizona-Style Skillet Cornbread with Poached Eggs and Warm Prickly Pear Sausage Dressing
Cornbread: To make cornbread, heat oven to 350°F. Butter a 9-inch cast iron skillet. Combine all ingredients in standing mixer. Beat with paddle on slow speed well combined. Spoon batter into prepared skillet. Bake about 30 minutes or until golden brown. Meanwhile, make sausage dressing. Brown sausage in skillet.
Stir in prickly pear syrup; bring to a boil. Remove
from heat; stir in green onions and 1/4 cup cilantro.
